Here are the major new features for IOS 5 software:
About the iCloud:
Recently, I tried to update IOS 5 software for iPod touch (4th generation) for my daughter by connecting the iPod Touch with iTune 10.5 on the PC. It took 3-4 more times, I received failure code when updating. The result caused me to look carefully on the iTune page. I find that there are new options on that page, when scroll down.
I switched from “back up to this computer” to “back up to iCloud”, and went down to select “Sync with iPod over Wi-Fi”. It connected automatically to the iCloud’s setting page on the iPod Touch and everything was smooth flowing.
There are customizable iCloud settings on the iPod Touch as well:
The iCloud is free for 5GB of storage –without the Photo Stream counts. It will automatic back up everything when you plug it with connect the Wi-Fi, and enable by turn on the button of iCloud Backup.
Here is step by step - how to set up iCloud:

There are two more places for iCloud setting in the iTune page on PC.
For my case, I leave it as the default
